Tokaji Oremus 6 Puttonyos
The elaboration of Aszú wine (teardrop wine) is a meticulous process that requires a lot of patience and extensive knowledge. It is only possible in good vintages, when nature ensures rain at the end of summer and a sunny and windy period in late autumn, essential conditions for the process of forming noble grains. The berries swollen by humidity crack, "Botrytis cinerea" establishes on their skin, and noble rot is triggered. For its preparation, the same formulas have been applied for hundreds of years. To the must that fits in a "Gönc" barrel, that is, 136 liters, we add 6 23kg buckets (Hungarian: "puttony") of noble Aszú grains. We macerate the noble Aszú berries with the must and then wait a day or two for the beans to swell and they are pressed.
