Chateau Pavie

In 1873, Ferdinand Bouffard, a Bordeaux négociant, inherited Domaine de la Sable, which gradually acquired small adjacent vineyards to create a 50-hectare property. In 1919, the property was acquired by Albert Porte, who joined all the parcels forming Château Pavie. In the first classification of Saint Émilion in 1959, Château Pavie managed to be recognized as a Premier Grand Cru Classé. The Château changed hands until it reached the current owners, Gerard and Chantal Perse, who acquired it in 1998 and in 2012 it was promoted to Premier Grand Cru Classé “A”, the highest classification within this AOC.

Tasting note:

Chateau Pavie has a ruby ​​red color with a medium-high robe and abundant tears. On the nose, the intensity is high, with dominant aromas of aging, with fruit occupying a secondary place. Sensations of licorice, cloves, vanilla, smoked wood, minerals, blackberries and cherries are appreciated. On the palate it is hyper-concentrated, full-bodied, long, tannic, sweet, powerful, impressive. Licorice and graphite predominate in the aftertaste.
