Bollinger La Grande Annee

Made by Bollinger only in exceptional vintages. It is made with grapes from Grands Crus and Premiers Crus (a total of 17 plots). Made from the "cuvée" (the best must from pressing), which undergoes the first fermentation in small 5-year-old wooden barrels, and no more than 400 liters, which allows it to increase the aromatic complexity and potential guard. Quite an exception in Champagne, and an element of identity and of the Bollinger style. The second fermentation and aging is carried out with a cork stopper (another differentiating element) to guarantee freshness. This process is carried out in underground cellars for a minimum of 5-6 years. After disgorging, it rests for three more months.

Tasting note

To the eye it has a delicate color and golden tones, a sign of the maturity of the wine and of Bollinger's production methods. On the nose, the first impression is of fresh almonds, then aromas of yellow fruits that evoke mango; toasted notes accompanied by dried citrus and pink grapefruit.
On the palate it has a beautiful aromatic fullness with flavors of honey and a smooth, mineral texture; notes of candied lemon and a delicious bitterness, wonderful and refreshing finish.
