Fermentation always occurs naturally and spontaneously. The grapes will always ferment in wooden tanks without temperature control with indigenous yeasts. The maceration is variable, but can last up to 2 or 3 weeks. Aged for 18 months in new French oak barrels from the Allier department. Prior to bottling, a light clarification is carried out with fresh egg white.

Tasting Note:

We find a wine that is presented with dense tears that denote a wine of great elegance. Purple trim that reflects its youth. On the nose we have aromas of ripe black fruit, spicy aromas of black pepper, undergrowth. Some menthol notes, rosemary and some smoked notes from its aging in top quality oak wood appear, creating an incomparable harmony and balance. In the mouth it expresses a sweet, elegant tannin, with an acidity that balances the palate. Licorice notes appear and pepper is present again. A very persistent, elegant, friendly and frank wine.
