Linguine

Linguine is the quintessential Ligurian long pasta format: shaped like a small, flat and narrow tagliatella, it was born to accompany the traditional pesto.

Thanks to the flattened section and the slightly convex shape, they are perfect for capturing seasonings and giving them back all the variety of flavors.

They are excellent simply with butter and sage or combined with fresh tomato-based sauces, with vegetables and aromatic herbs or with quick spicy sauces, prepared with extra virgin olive oil, garlic, chilli, anchovies and capers.

They are also recommended for sauces based on fish with shellfish and shellfish and "white" sauces prepared with milk cream, mascarpone, soft and melting cheeses and with the addition of spices such as saffron, radish, curry and ginger.
