It seems that the origin of brandade was a variant of aioli to which, when dried cod was introduced from the Basque Country and along the Pyrenees, possibly around the 16th century, it was added. The brandade belonged to the popular traditional home and family cuisine that was often dined by the peasants of the coast that goes from Alicante to the Liguria region (northwestern Italy). On the other hand, La Cuna was born in Malpica del Tajo, a small town in the province of Toledo, one of the most important cities due to its medieval heritage, declared a World Heritage Site by UNESCO. Wanting to convey the pleasure of good food and the importance of top quality ingredients. They make this brandade of cod in an artisan and natural way, without preservatives or dyes.
