The Mojo Verde is an essential in Canarian food. Its striking color is obtained through the use of local fresh green pepper. It is a perfect ally for fish, although it is also consumed with wrinkled potatoes or gofio and to give a touch of flavor to salads. It has a mild, yet intense flavor. This mojo is suitable for celiacs, since it is gluten-free.
