This unique branch vinegar is born from natural acetate, made from Pedro Ximénez. When a Pedro Ximénez wine is made from raisins, the evolution is not always as desired. There are natural yeasts, mycodermas, that sometimes develop, feeding on the alcohol and fructose of the wine, which end up being converted into acetate.
