Pazo de San Mauro is a monovarietal wine, the result of a rigorous selection of the best grapes from its own vineyard. The vineyard is located in a privileged place in Condado do Tea, on the banks of the Miño, on terraces of boulders that form an amphitheater facing south, with extraordinary insolation.

To make Pazo de San Mauro, the grapes are harvested by hand. Selection in the vineyard of the grapes. Various forms of vinification to obtain maximum expressiveness and complexity. One part of the grape is destemmed and then macerated at low temperature (11ºC) and the other is vinified using whole bunches of well-lignified stems. Alcoholic fermentation in stainless steel tanks. at 17ºC for 15 days.

Tasting Note:

Brilliant straw yellow colour. Expressive in its typicity, with notes of fresh fruit, citrus and floral details. Excellent accompaniment for barnacles, spider crabs and all kinds of shellfish, white fish and sushi, as well as corn pies and rice dishes.
