Ximénez-Spínola Pedro Ximénez Muy Viejo is a sweet wine made with the Pedro Ximénez variety in the DO Jerez-Xérès-Sherry by the Ximénez-Spínola winery in Jerez de la frontera (Cadiz).
Ximénez-Spínola Pedro Ximénez Muy Viejo comes from whitewashed vineyards of albariza soil. Typical soil of the countryside of the Marco de Jerez that forms boulders to keep the water from the scarce rains in the subsoil. A total of 27 hectares of vineyards that are cultivated in the traditional way.
Once the Ximénez-Spínola Pedro Ximénez Muy Viejo grape is cut, it is left to dehydrate in the sun for 21 days and after vinification, the wine is aged for no less than 15 years in American oak barrels. It consists of the traditional system of criaderas and soleras, a continuous "blended" of wines of various ages that begins with musts from 1918 and that are controlled in barrels for their level of quality.

Tasting note:
Nice intense mahogany with iodized notes, dense and bright. Aromas of dark chocolate, raisins and roasted, very elegant and complex. On the palate it is silky, soft and subtle with a very long and powerful finish.
