Heather honey.

Heather honey arises when bees suck from the flowers of what is known as heather, heather or biercol. It is a very common plant in mountain areas where it stands out for the purple color of its flowers.

• Color: light amber-amber.
• Aroma : intense and very persistent of autumn leaves, humus, mushrooms.
• Taste : sweet, with a clear bitter component and with clear salty notes, which are greater if there is an accompaniment of honeydew; in this case malted notes appear in the retronasal.
• Touch: tendency to crystallization variable: high if it is accompanied by fabáceas of prairie; Low if accompanied by honeydew.
