Sugar Bears, are you tempted? Ercus sugars are available in 3 colours, from white to brown and red. The color is naturally provided by the sugar cane: the darker the cane sugar, the less refined it is: the presence of plant extracts present in the cane will give it a more or less amber color and a flavor that can resemble hints of candy. Vergeoise (or also called brown sugar in Belgium), is an unrefined sugar that usually comes from the residual syrup from sugar crystallization. Vergeoise is darker, similar to cocoa, and its aroma is more pronounced.
