Take a salmon loin clean of bones and bones, preferably not too thick. We proceed to wash the salmon loin very well and dry it. Place in the refrigerator for 48 hours, if possible with some weight on top, during this process. After 48 hours, remove it from the refrigerator and wash it with cold water. Dry it and put it back in the fridge for another 48 hours and it will be available to enjoy a tasty SMOKED SALMON.
