Arzúa Ulloa is one of the Galician cheeses par excellence. It is disc-shaped and medium in size. It is made with cow's milk, which generates a smooth, thin, yellow-colored rind that is docile when cut thanks to the creamy texture that is hidden inside. It has a flavor close to butter, although somewhat softer, with low acidity and a slight touch of salt.

It is ideal for melting as it maintains heat and appears white and elastic while waiting on the table.
