Pergamena is an unleavened bread, thin as paper, crunchy and tasty. Actually, the charcoal only gives it a touch of color that contrasts with cheeses and foie. It doesn't taste or smell like coal. It is difficult that once the box is opened, there is something left to save for another day. It hooks more than the pipes!
